Harvested from the deep waters of New Zealand’s coastline, Kōura rangi, or scampi are available all year round and exported frozen.
Part of the lobster family, scampi have a distinctive appearance with darker bands on a pinkish segmented shell.
Scampi flesh is white with pink margins and has a delicious sweet and delicate flavour. Whole scampi are delicious cooked on a barbecue and can also be eaten raw as sashimi.
